Ingredients
- 1 c all purpose flour
- tbsp. cocoa powder
- 1 tbsp. sugar
- 1/4 tsp. salt
- 2 large eggs
- 1 tbsp. softened butter
- 2 tsp. vanilla extract
- 1 1/2 c milk
- 3 tsp. red food coloring
Instructions
- Combine all ingredients in a large food processor or blender and pulse a few times, then mix for about 10 seconds until smooth.
- Chill the batter for 20 minutes in the fridge
- Heat a small nonstick frying pan over medium heat. You can use a regular size pan but will get fewer crepes.
- Ladle in just enough batter to cover the pan and immediately tilt the pan around to roll the batter around to cover until it stops rolling.
- Cook for about 30 seconds and then lift up the edge to check that it is done and dry underneath before giving it a flip with a spatula or your fingers.
- Cook for about 30 seconds on the second side and set aside on a plate to cool
- Repeat for more crepes until you've used all your batter.
